I have an old Wild Horses 3.5 lift kit from 20 years ago with the full-length add-a-leaf, slipped into the stock leaf stack. Would this kit be a good replacement for that setup? Would it be approximately the same height?

Yes, a full new leaf pack would be a great replacement. Also yes, you should end up close to the same height with the 3.5 leaf springs, once they settle in.
